　　杜德美奉康熙帝之命绘制大清国地图，因此得以亲眼见到人参的生长环境。一七〇九年七月底，杜德美的绘制队伍到达距离朝鲜边境仅四法里远的一个村子，住在那里的鞑靼人在邻近的山林中挖了四株完整的人参，放在篮子里给杜德美。在信中，杜德美还画下了他所收到的人参图谱。通过这些信件往来，总巡阅使可能首次见到人参的图像及其说明。遗憾的是，现今版本的书简集中没有将图谱收入。
　　当时中国许多名医宣称，人参是治疗身心过度劳累引起的衰竭症的灵丹，它不仅能化痰，治愈肺虚及胸膜炎，增进食欲，还能驱散气郁、大补元气。杜德美认为，如果人参不能产生经久不衰的效应，就无法想象汉人和满人会如此重视它。甚至有些健康人为了更加强壮，也常服用人参。他相信精通制药的欧洲人若能有足够的人参进行必要的试验，通过化学方法测试其特性，并根据病情，利用人参适当地对症下药，那么，人参在他们手里将成为上等良药。
　　杜德美非常相信人参的疗效：活血化瘀、增加热量、帮助消化、滋补强身。他对总巡阅史说明了自己服用人参的经验：他替自己量脉搏，然后服用半枝未曾加工的生人参，一小时候，他感觉脉搏跳得比以前还要有力，胃口随之大开，浑身充满活力。当时他并未完全相信那次实验，认为这种变化或许是那天休息得好的缘故。四天之后，杜德美因工作关系，疲倦得几乎要从马背上摔下，同队一位中国官员见状就给他一枝人参，他服用了半枝，一小时后就不再感到虚弱了。从那时起，他发现每次服用都有相同的效果。

在紫禁城的东部靠北半面，有一组完整的宫殿建筑群，这就是宁寿宫建筑群。在明朝，这里也有一组建筑，但规模不很大；清朝乾隆年间，乾隆皇帝宣布退位后当太上皇养老在此建了宁寿宫，这是一组十分完整的建筑群体，它分为前面的宫殿和后面的寝居两部分。在后一部分里，可分为三个区，中路是居住区，东路是娱乐区，西路是园林区。整个建筑群四周有高墙相围，成为一个相当封闭的独立区域。

交泰殿在乾清宫和坤宁宫之间，含“天地交合、安康美满”之意。其建于明代，清嘉庆三年（公元1798年）重修，是座四角攒尖，镀金宝顶，龙凤纹饰的方形殿。明、清时，该殿是皇后生日举办寿庆活动的地方。清代皇后所谓亲蚕典礼，需至此检查祭典仪式的准备情况。清代的“宝玺”（印章）也收藏在这里。

古人云：“安身之本，必资于食，不知食宜，不足以生存”从饱食到美食，再到追求健康，文明进步，对饮食的要求也不断提高。清代的养生学已发展到理论与实践相结合的鼎盛时期，这在宫廷御膳方面表现得非常突出。清帝对膳食的认识不断提高，保健知识也愈发丰富，大多十分注意合理调节饮食、搭配膳食，永葆健康，延年益寿成为他们的强烈愿望。清代皇帝中寿命较高的康熙皇帝、乾隆皇帝，对膳食养生都有一定的见解。康熙皇帝在论述有关饮食疗法时指出：“人自有生以来，肠胃各自有分别处也”。他在《庭训格言》中也指出：“凡人饮食之类，当各择其宜于身者”，“每兼菜蔬食之则少病，于身有益，所以农夫身体强壮，至老犹康者，皆此故也。”对于选择季节食品，康熙皇帝强调：“诸样可食果品，于正当成熟时食之，气味甘美，亦且宜人，如我为大君，下人各欲进其微诚，故争进所得出鲜果急菜蔬等类，朕只略尝而已，未尝食一次也。必待其成熟之时始食之，此亦养身之要也。”康熙皇帝告诫人们择其饮食时，当选择对自己身体有营养补益价值的食品，所好之物不可多食。乾隆皇帝在养生保健膳食中，身体力行地实践着祖父的训诫。清宫御膳作为中国封建社会末期最高层次的饮食，膳食品种不乏厚味膏梁，但杂粮蔬菜、山果野味在御膳中也占有重要地位。
